Rosé tear wine from the coldest vineyards of the Tramuntana, which provide fresh aromas and balanced acidity. The destemmed and crushed grapes are put into a stainless steel vat, macerated for between 9 and 14 hours depending on the vintage and then bled off, obtaining the flower must. The clarified must is cold static for 72 hours. The fermentation is the result of a meticulous study of seven vintages, in which it was decided to select yeasts from Provenza. It ferments at 16ºC and no malolactic fermentation is carried out.
Pale pink colour, with orange reflection inherent to the Manto Negro grape. On the nose red fruits (cherry, strawberry), minerals (wet stone) and native herbs appear. Satiny and unctuous attack, with elegant texture, a certain salinity and persistent, harmonious and balanced finish.
Ideal with grilled vegetables, fish cooked in sauce, rice dishes, omelettes, moussaka and Italian gastronomy.Optimal drinking temperature 10 – 12ºC
