August is an important month for the vineyard at the Son Vich de Superna winery. In addition to continuing the green operations of de-stemming, destemming, defoliation and thinning of bunches, veraison takes place.
It is during veraison that the grapes begin to color, coinciding with the start of their alcoholic and phenolic maturation. At this time, sugars, aromas, acids and phenolic compounds accumulate, which will determine the potential of the grapes for the elaboration of our future wines.
Veraison is therefore the last step before the harvest, which this year also took place during the month of August.
Viognier and Llàgrima de Superna together with Marges are made with the earliest grapes from the estate. The reds will have to wait until September, when phenolic ripening will be optimal.
This year we are very happy with the excellent sanitary state of the grapes and the great quality of the grapes, we have a great harvest ahead.
